Vanilla Chex Mix

We actually had rain here in the desert this morning.  Since we don't get it too often it is definitely a big deal when we do!  That being said the rain & cloudy weather made me feel like baking today.  Here is what I made:

Delicious Vanilla Chex Mix!


Here is the recipe:

Ingredients:

1 bag semisweet chocolate chips                                     2 cups small pretzel twists                             
3 cups Corn Chex cereal                                                 2 cups miniature marshmallows
3 cups Rice Chex cereal                                                 1 (20 oz) pkg. vanilla-flavored candy coating
3 cups Wheat Chex cereal                                                 (almond bark/ambrosia)
2 cups dry-roasted nuts (peanuts, cashews, or almonds)

 
Directions:  Place chocolate chips in freezer to chill.  Mix cereals, peanuts, pretzels, and marshmallows in large bowl; set aside.  Microwave candy coating in large uncovered microwavable bowl on high for 1 minute 30 seconds.  Stir, breaking up large chunks.  Microwave about 30 seconds more or until coating can be stirred smooth.  Gently and quickly pour coating onto cereal mixture and fold in until evenly coated.  Stir in chilled chocolate chips.  Spread on waxed paper; cool completely.  Break into chunks.  Store in airtight container in refrigerator.  Yields 20 servings.

This recipe is a favorite with my family and friends.  My fellow Disney Chick, Candy, found this recipe several years back in Paper Crafts Magazine.  It was an instant hit with all of us!
